Zwiebelkuchen - sort of an onion quiche 

You know I love my Zwiebeln (onions)!

Slice three onions
Dice 2 thick slices of ham
4 eggs
1/2 cup sour cream
1/2 teaspoon nutmeg
1/4 cup shredded mozzarella or swiss cheese
salt and pepper to taste
2 pie crusts

Preheat oven to 400º. Sauté onions until translucent. In bowl scramble eggs, add ham, sour cream, cheese, nutmeg and salt and pepper. Add onions and mix thoroughly.

Put bottom pie crust in a pie pan if it isn't already. Fill in onion mixture. Use the second crust to make a fancy top if you like.

Bake for 15 minutes at 400º, then reduce to 350º until top is brown and a knife comes out clean.
